Crown roast for your table


600 g lamb rack with ribs
2 tbsp honey
2 tbsp basil, finely chopped
2 cloves garlic, crushed
1/3 tsp salt
1/2 tsp ground black pepper
2 dl breadcrumbs
2 tbsp parsley, finely chopped


Heat the oven to 190°C.
Mix together honey, basil, garlic, salt and pepper and brush the mixture onto the rack.
Mix together the breadcrumbs and parsley. Coat the rack with the mixture.
Put the meat in the oven for
4 minutes. Remove from oven and let it rest on the counter for
4 minutes. Put the meat back in the oven for 4 minutes.
Repeat until the meat has been in the oven for up to 12 minutes.
Serve with black-eyed peas, basil pesto and vegetables.
